Solubility: easily soluble in water, ethanol and acetone, almost insoluble in anhydrous ether, benzene, hexane and other organic solvents.
Density: about 1.58 g/cm³.
It is a strong acid with multiple phosphate groups, which can form stable complexes with many metal ions (such as calcium, magnesium, iron, zinc, etc.). This complexation has important applications in food, medicine and other fields, for example, it can prevent food oxidation and discoloration caused by metal ions.
